|Tasting Notes:||Colour: – a vibrant blue/black hue of real intensity
Nose: – Complex aromas of violets and ripe black fruits, layered with floral notes and a dark pepper spice. Nuances of fine-grained French oak support the fruit aromas.
Palate: – an initial burst of dark and rich Syrah fruit is supported by very fine tannins and toasty French oak. The flavour is both long and persistent and highlights the impeccable balance between fruit, tannin and acidity.

A Syrah designed for long aging.
|Winemaking Notes:||After crushing to an open-top fermenter, the grapes were inoculated with a special Syrah yeast.
The cap was plunged 3 or 4 times per day during the active fermentation and then reduced for the remaining ‘on-skins’ period.In addition to plunging the skins, we periodically used aerated pump-overs to assist in colour stabilisation and tannin management. Micro oxygenation was also used extensively on this wine to evolve the mouthfeel of the tannins (‘melt the tannins’).
After a total time of 30 days on skins, the wine was pressed off and aged in French barriques for a total of 14 months.
