A ‘New-World’ Chardonnay aiming for powerful concentration with a definitive acid tension in the palate attack. A tighter, more citrus/mineral-based aroma and flavour profile than the ‘riper/fatter’ Chardonnays in our range.
Tight, linear, ‘flinty’, mineral with complexity/savoriness from the wild yeast fermentation.
Lots of interwoven layers unburdened from overt new oak dominance.

Hen’s Teeth Chardonnay 2024

A ‘New-World’ Chardonnay, richer and riper in its fruit profile than our EVB Chardonnay but not as broad and fat as our Reserve.
The wine is all about the grapes and expressing the terroir of vineyard 287.

A range of aromas and flavours from ripe grapefruit through white nectarine and white peach with obvious tertiary characters from wild yeast and toasty French barriques.

Although 100% barrel fermented in French barriques, we have intentionally kept the new oak level down at 20%.

While drinking well in its youth, this wine will reward careful cellaring for at least 10-12 years.

Methode Traditionnelle Blanc de Noirs 2019

This is an exciting approach to Methode, using a non-traditional red variety with traditional winemaking processes. Made from Barbera grapes, the similarity of structure, tannin and colour of grapes in the vineyard and glass to Pinot Noir suggested we could successfully make a Blanc de Noirs from these grapes. We didn’t know how it would turn out, but we took it on as a challenge and we are very pleased and excited with the result.

With an impeccable balance between fruit nuances, yeast, acidity and freshness, this wine has its own personality which is something de la terre always strives to create.

The wine has a slightly pink/orange tinge, reminiscent of its red grape origins, with a distinct berry fruit aroma. The palate has a really fresh, zesty attack, showing definitive but subtle and elegant red-berry notes with an explosive fine mousse. Very long finish and the bead continues on the palate right through to the finish of the wine. The berry fruit has become the hero over the yeast.

Stainless steel (primary) fermentation at elevated temperatures. Fermented (primary and in-bottle)with a special strain of Champagne yeast. 100% malo-lactic fermentation. 36 months on yeast in bottle (tirage). Riddled by hand and manually disgorged at de la terre. Zero dosage (no sugar addition) at disgorging. Estate bottled, hand-labelled, very small production of 552 bottles, individually hand-numbered.

Winemaker’s Reserve Noble Viognier (375 ml) 2016

Light yellow when young with a slow evolution to a more golden straw colour with time in bottle.
The nose is hugely powerful – raisin, honey, apricot, lychee. The nose is primarily about concentration but the key is the clean, fresh aromas – not too heavy. Expect evolution toward vanilla and crème brulée notes with time in the bottle.
The palate is very full and concentrated on the ‘attack’ with a luscious mid-palate and real length. Like the nose, our aim here is to keep this wine fresh and not too heavy or cloying. There is a seam of acidity that runs alongside the fruit to retain freshness and balance.
Fully botrytised grapes – mostly wet, ‘furry’ raisins at harvest. Tank fermented at cool temperatures, no oak influence. Ferment stopped at 13.5% alcohol and ~115 – 120 grams per litre of sugar.
Estate bottled and labelled, each bottle individually hand-numbered.

Montepulciano 2021

The wine is a deep red/purple/black colour.
The nose is dominated by dark fruits – black cherry, black olive and Damson plum alongside cedar and vanilla oak notes.
The palate has a strong and rich attack of dark fruit which moves seamlessly through to a vibrant and mouth-watering mid=palate with real structure. There is a lovely balance between fruit, tannins and acidity with an attractive seam of spicy French oak.
Drinking nicely in its youth but with huge potential for ageing and development – with time in the bottle, the primary fruits will give way to further complexities such as tar, liquorice and leather.
Cellar well and you won’t have to think about it going backwards for 15 or more years.
Hand-picked grapes from low-yielding vines on the smallest of our Hill Country Estate terraces. Our winemaking procedures aimed at highlighting the black fruit spectrum and rich tannin structure. The wine was aged for ~ 15 months in French oak (40% new)
Un-fined and unfiltered, estate bottled and hand-labelled. A small production only – individually hand-numbered
