The pale straw colour is typical of unoaked Chardonnay.

With bottle age, this wine has shifted from vibrant, fresh fruit in its youth to a complex ‘gunflint’ / ‘oyster shell’ spectrum. A case study in limestone minerality.

There is a concentrated intensity in the ‘attack’ on the palate, but with a tight and linear mid-palate flowing through to a long elegant finish.

Originally intended as a fresh, young Chardonnay, this wine has continued to develop an almost European complexity and minerality with time in the bottle. The clean (botrytis-free) grapes and gentle pressing have set this wine up for a long cellaring.

This style of Chardonnay can be served over a range of temperatures – from very cold (10°C) to room temperature. A great wine to enjoy with light seafood cuisine.
